Wrap it up breakfast!

So does anyone else have a Sun burn from their fridge light? Have talked to a lot of family and friends that have done their grocery shopping for the month and it's lasted as long as 10 days for some... Hard not to eat when there is so little else to do.

Okay here's a favourite breakfast of ours.

Ingredients - Diced potatoes, ham (bacon or sausage works too), peppers, eggs, wrap and choice of cheese (I use pre-shredded).

Good to start with avocado oil (has a high burn point) and brown the potatoes before adding the peppers.

Grill both to suit or until brown then add pre-cooked meat. Cook for at least 2-3 min on medium heat.

Add eggs and cook until eggs are done to your liking... Pam likes them done - done while I like my with a little moisture still in them. With this receipt we both get what we want. I take mine off the stove a little earlier and leave hers a little longer.

Season to taste while still in the pan. Then add to pre-ready wrap.

Don't wait to long to roll the wrap after adding hot eggs. The heat weakens the wrap and it will fall apart if you wait too long. After you complete the wrap let it sit for 30 seconds before serving.

Serve with your favourite breakfast beverage and enjoy. Healthy easy to make meal.

Finally got around to making your wrap yesterday. Added some green onion to it and really enjoyed it. Thanks.

Got any more good recipes?

Thanks for the wrap recipe. You are a man of many skills . . wait a minute I forgot you were a cook in your early life. Gonna try that wrap. Can't do it today I'm wa-a-a-a-y too busy. Will advise the results.
